plans
Don't you hate it when you make plans, and then BAM, everything gets shot to shit? Me too. Luckily there's always the back up plan. You know, the one you'd rather not do but is a better option than sitting around home and doing nothing all day. Plan B. For me, today, that was me using my mass to keep a chair down, at a friends place.

little chunks of awesome!!
Made the chicken puffs last night and boy were they tasty. So tasty in fact, that I'm still making them for turkey day in a bigger batch. Any left over filling... well, there won't be left over filling. So, yeah after making and eating the first batch, I made the second to take with me and give out as turkey day presents. I'm sure everyone will like them as much as I do.
Now I just need to figure out how to get them to the opposite side of town, while riding a bike over several very large hills. I was going to ride the bus, but apparently it shuts down on the day of overindulgence and cat naps. Guess I'll just have to find my bungee-cords. I hope nobody borrowed them with out telling me. Again.

The turkey day snack!
Right now I'm hard at work, prepping my special herb butter for the hopefully tasty morsels known as chicken puffs. I've been fantasizing about these for a couple weeks now. Ok, so Thanksgiving is merely an excuse for me to try something new, but hey, what an awesome excuse it is. With out further delay, here is the recipe. (link)
Chicken Puffs
Ingredients
2 skinless, boneless chicken breast halves - cubed
3 tablespoons chopped onion
3 cloves garlic, peeled and minced
3/4 (8 ounce) package cream cheese
6 tablespoons herbed or regular butter
3 (10 ounce) cans refrigerated crescent roll dough
Directions
1. In a medium saucepan over medium heat, slowly cook and stir skinless, boneless chicken breast halves, onion and garlic. Cook until onions are tender and chicken is lightly browned.
2. In a medium bowl, blend chicken mixture, cream cheese and butter until creamy.
3. Preheat oven to 325 degrees F (165 degrees C).
4. Unroll croissants and divide in half to create 12 rectangles. Place approximately one tablespoon of the chicken mixture on each rectangle. Fold into balls.
5. Arrange balls on a large baking sheet. Bake in the preheated oven 12 minutes, or until golden brown.
makes 12 servings

Mmmmm food...
Pork steak, peas and a large baked potato with a slice of sandwich cheese and several cubes colby jack cheese. And boy was it tasty.
Turkey day is soon upon us!
Turkey day will soon be upon us once again, and this year I plan to experiment a little with what I take to various thanksgiving diners. I've looked high, and I've looked low, and after all of that searching I found chicken puffs. It's like a crab rangoon, but with chicken and instead of using a wonton wrap, you use canned crescent roll dough. They sure sound awesome, right? I guess I'll just have to make them and see for myself, maybe blog about them afterwords. No promises though, I do happen to be a rather lazy individual.
Anyway, enough about the chicken puffs, and on with the pie! I've heard from the grape vine that I may be eating several different kinds of pie, including dutch apple. I can only be so lucky.
I swear, with as much as I intend on eating, I should go on a couple day, liquids only fast. I might just do that. Maybe even live on crystal light and chicken broth. Nah. That would be morally wrong. You don't sick a hungry fat guy on a table of food. You just don't. Even if the hungry fat guy is your self.

Welcome!
Welcome all to my random entries blog, where I'll cover anything and everything that catches my fancy. This could be anything from my recounting of a killer meal I made, to my latest bike ride.
In this first installment, I'm going to write a bit about my recent entertaining of becoming a vegetarian. O.k., maybe not so much as go vegetarian, but more "meat light" than I currently am (bacon should be a food group of it's own). See, I wouldn't mind being a vegetarian, I really wouldn't. I like salads as much as the next guy. No, the problem is that I happen to really enjoy a good steak. So what I've decided to do is to try and cut back on how much meat I eat and eat a wider variety of vegetables and such. Not exactly easy in my house hold, what with cooking for very picky eaters, so when I find something that is both "meat lite" and a crowd-pleaser I don't need to be told twice.
For example, one of the recipe's I've made a couple times lately (chicken broccoli casserole) has just a hint of chicken. Can't go wrong with that casserole, very filling. (link)
I've been eying a butter bean burger recipe, though I doubt I'd get anyone other than myself to try them. Not that I blame them. They sound good to me though. (link)
